Today I made Spicy Tomato Soup:
1lb tomatoes {vine tomatoes)
1 carton of tomato juice
1 large potato (chop into small chunks)
1 large leek
half a large onion
1 large carrot
fresh red chillies
1/4 pint of fresh cream or small tub of creme fresh
half a bag of water crest.
half a pint of veg stock
half clove of garlic
Cut leeks onions, carrots and garlic and 3 chillies (deseeded) roughly and add to pan with some butter and pepper and salt. Cook until they soften. Add fresh tomatoes (chopped). Cook for another 5 mins. Add the veg stock and the potatoes and the tomato juice. Simmer until the potatoes are soft (prob about 40 min). May need to season with more salt and pepper and add more chilli. Leave to simmer for another 20 mins, then 5 mins before eating add the cream and the watercrest and blitz in food processor.
Cut up some crusty bread and serve the bugger. This is about 4 servings, I think. The end.
